The Enoki (Flammulina velutipes), also called Velvet Shank or Winter Mushroom, has been known in East Asia for over 1,000 years. In Japan, it's called "Enokitake", named after the Enoki tree (Chinese hackberry) where it grows wild.

Historically, Enoki was already cultivated during the Tang Dynasty (618-907 AD) in China. The Japanese perfected cultivation in the 20th century and developed the typical long, white cultivated forms.

Wild vs. Cultivated: Wild Enoki is brownish with shorter stems and stronger flavor. The cultivated form is grown in darkness, which produces the long, white stems - a purely visual effect without chemicals.

Culinarily, Enoki is versatile: raw in salads, in soups and hot pots, as a wrap filling, or briefly stir-fried. Their mild, slightly nutty taste and crunchy texture make them a favorite in Asian cuisine.

How to use Enoki properly

Preparation

Cut off the connected base (about 2-3 cm) and gently separate the cluster. Only briefly rinse Enoki, don't soak - they absorb a lot of water.

Brief Cooking

Enoki become soft quickly! Add to soups only at the end (30-60 seconds), when frying just toss briefly. The crunchy texture is their trademark.

Enjoy Raw

Enoki are one of the few mushrooms that taste delicious raw. In salads, as a topping, or as an elegant garnish for Asian dishes.
