History & Facts
The Champignon (Agaricus bisporus) is the most widely cultivated and consumed edible mushroom in the world. Originally cultivated in the caves near Paris, it still bears the nickname "Champignon de Paris" today.
Historically, systematic champignon cultivation began in the 17th century in France. King Louis XIV had them grown in the catacombs of Paris. From there, cultivation spread throughout Europe.
Today, champignons are grown in high-tech climate chambers. This enables year-round availability with consistently high quality - regardless of weather and season.
Culinarily, the champignon is an all-rounder: raw in salads, pan-fried, stuffed, in soups or sauces - it complements almost any dish and is indispensable in gastronomy.

Expert Cooking Tips
Preparation
Edible Raw
Champignons are one of the few mushrooms that can be eaten raw. Thinly sliced in salad or as carpaccio - a real treat.
Sear at High Heat
Fry in hot fat in small batches. Too many at once and they steam instead of roasting - the secret to a golden crust.
Don't Wash
Never wash under water - they absorb it like a sponge. Instead, wipe with a kitchen towel or soft brush.
Classic Dishes
Cream of Mushroom Soup
The French classic with cream, white wine, and fresh herbs. Pureed smooth or with mushroom pieces for more bite.
Mushroom Risotto
Arborio rice with fried champignons, Parmesan, and a hint of truffle oil - Italian perfection.
Stuffed Giant Champignons
Filled with spinach and feta or ground meat and baked - ideal as a starter or vegetarian main course.
Uwe's Secret Tip
"For the perfect mushroom sauce: First fry the mushrooms until golden brown, then deglaze with a little cognac and flambe. This caramelizes the sugar in the mushrooms and gives incredible depth. Only then add the cream - this turns every sauce into a taste experience."
