History & Facts
The Shiitake (Lentinula edodes) is the second most popular edible mushroom in the world after the champignon. It has been cultivated in Japan and China for over 2,000 years and is considered there as the "King of Mushrooms".
Historically, shiitake was first systematically cultivated on wooden logs during the Ming Dynasty (1368-1644) in China. The name means "mushroom of the Shii tree" (Pasania oak) in Japanese.
Health-wise, shiitake is known for its high content of beta-glucans, which are said to support the immune system. In traditional Chinese medicine, it has been valued as a medicinal mushroom for centuries.
Culinarily, shiitake impresses with its intense umami flavor - the "fifth taste". It is indispensable in Asian cuisine but is also becoming increasingly popular in modern European gastronomy.
