The King Oyster (Pleurotus eryngii), also known as King Trumpet, is the largest member of the oyster mushroom family. In nature, it grows parasitically on the roots of umbellifers like sea holly (Eryngium) - hence its scientific name.
Historically, the King Oyster was known in the Mediterranean region but was only systematically cultivated in the 1990s. Korea and Japan perfected the cultivation and made it popular worldwide.
In Asia, it is considered one of the noblest edible mushrooms. Its thick, white flesh and mild flavor are reminiscent of veal or scallops - perfect for vegetarian haute cuisine.
