History & Facts

The Almond Mushroom (Agaricus subrufescens), also known as Himematsutake or "Cogumelo do Sol", originates from Brazil and was brought to Japan from there.

In Japan, it is highly valued as a vital mushroom. Its sweet, almond-like aroma also makes it culinarily interesting - a mushroom that smells of marzipan.

Culinarily, it is excellent for frying and grilling. The intense aroma is retained even at higher temperatures.

Uwe's Secret Tip

"Almond mushrooms develop their full aroma when seared in hot butter with a little garlic and finished with a splash of lemon juice. The almond aroma then combines wonderfully with the acidity."
