The Almond Mushroom (Agaricus subrufescens), also known as Himematsutake or "Cogumelo do Sol", originates from Brazil and was brought to Japan from there.
In Japan, it is highly valued as a vital mushroom. Its sweet, almond-like aroma also makes it culinarily interesting - a mushroom that smells of marzipan.
Culinarily, it is excellent for frying and grilling. The intense aroma is retained even at higher temperatures.
