Preparation
Trim stems
Cut off hard stem ends, the rest is edible
Don't wash
Only brush mushrooms dry - water makes them mushy
Portion
Cut into strips or large pieces - not too small!
Cooking
Fry hot
Fry at high heat for 3-5 min until golden - gives roasted flavors
Also delicious raw
Thin slices in salads or as carpaccio
Season well
Absorb spices super well - garlic and thyme are perfect

"My favorite trick: First put oyster mushrooms in the hot pan without oil until they release their own water. Only then add oil - that's how they get really crispy and get that wonderful golden brown color!"
