History & Facts

The Porcini (Boletus edulis), also known as King Bolete or Cep, belongs to the bolete family and is considered one of the most noble edible mushrooms worldwide. Its name derives from its firm, "stone-like" flesh.

Historically, the porcini has been prized since the Middle Ages. Known in Italy as "Porcino" (little pig), it plays a central role in Mediterranean cuisine. The Romans valued it as a delicacy, and it remains indispensable in fine dining to this day.

Botanically, the porcini forms mycorrhizal symbioses with spruce, pine, oak, and beech trees. This close relationship makes cultivation impossible - all porcini mushrooms come from wild foraging.

Culinarily, the porcini impresses with its nutty, aromatic flavor and firm texture. It is excellent for pan-frying, risotto, pasta, soups, and as an elegant side dish.

Uwe Buschhaus

Uwe's Secret Tip

"Add porcini just before the end of cooking - this way they retain their full aroma and don't become rubbery. For risotto, sear the mushrooms separately and fold them in at the end."
